I bought one of these at the weekend…

A 20cm Wusthof Cooks Knife.
I also picked up a Chef’s Choice diamond-slide-sharpener-honer as I’m not 100% comfortable with the honing steel, plus for the Wusthof the sales guy was pushing a ceramic honer which clocked in at $149 more expensive than the slider.

Best $250 I’ve spent. Last night, prepping for the salmon and prawn curry was quick and easy - without any application of pressure or sawing, the knife slid through capsicum, onion, ginger root and garlic like warm butter. Absolute heaven.
I’m looking at the Wusthof Santokus too… maybe next year.
